Preidlhof sits high above the Vinschgau Valley in the village of Naturno, surrounded by terraced apple and pear orchards and framed by the Texel Group Nature Park to the north. The kitchen at Preidlhof operates a strict farm-to-fork philosophy: herbs from its own garden, honey from its own hives, speck from the valley below. The restaurant holds three Gault Millau toques, and in our experience across Alpine hotel restaurants, few match the consistency here. Dinner is a composed multi-course journey: wild herb veloute, marinated trout with apple and horseradish, hand-rolled Spatzle in burnt butter. Portions are restrained by design. The cumulative effect is deeply satisfying.
